Welsh Rarebit

Ingredients

  • 1/2 cup butter
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • Garlic (optional)
  • Basil (optional)
  • Oregano (optional)
  • 1/2 teaspoon worcestershire sauce
  • 4 1/2 cups V8 (vegetable juice)
  • 1 1/2 pounds cheddar cheese (6 cups shredded)



Cooking

  1. In a large pot, melt butter over medium heat. Add flour and stir to create a roux.
  2. Stir in dry seasonings (salt, pepper, mustard). Optional seasonings can be added as well, to taste.
  3. Cook and stir for five minutes, until bubbly.
  4. Add worcestershire sauce.
  5. Gradually add V8.
  6. When juice mixture is smooth, slowly add in cheese.
  7. Stir until cheese is well incorporated.
  8. Serve with bread.
