This cookie takes a bit of work to make, but is (hopefully) worth it. It is basically an interpretation of an ice box cookie.

Ingredients

Vanilla/Almond Dough

  • 1/2 cup granulated sugar
  • 2 tablespoons confectioners' sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/4 teaspoons vanilla or almond extract
  • 1 cup unsalted butter at room temperature
  • 2 cups flour

Chocolate Dough

  • 1 1/4 cups granulated sugar
  • 3/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1 egg
  • 1 1/2 cups flour


Preparation

Vanilla/Almond Dough

  1. Mix sugars and salt together in a medium bowl.
  2. Whisk egg and extract in a small bowl.
  3. Cream the butter in a large bowl until smooth.
  4. Gradually add the sugar mixture to the flour and beat until fluffy.
  5. Add egg mixture to the large bowl and beat until smooth.
  6. Gradually add the flour until it is fully incorporated.
