Broccoli Soup

Ingredients

  • 4 tablespoons butter
  • 3/4 lb frozen broccoli florets
  • 3/4 lb potatoes, diced
  • 1 large onion, chopped
  • 1 carrot, chopped
  • Salt
  • Ground pepper
  • 3 tablespoons flour
  • 4 cups chicken broth
  • 1/2 cup cream


Preparation

  1. Melt butter in a large stock pot over medium-high heat.
  2. Add broccoli, potato, onion, carrot, salt, and pepper and saute until the onion is translucent, about 2 minutes.
  3. Add flour and cook for an additional minute.
  4. Add chicken broth and bring to a boil, then reduce heat and simmer for 15 minutes or until broccoli and potatoes are tender.
  5. Lightly puree in a blender until the desired consistency is reached. I like to leave it slightly chunky.
  6. Return to pot and blend in cream and additional salt and pepper, if desired.
  7. Serve immediately.
