Broccoli Soup

Preparation
- Melt butter in a large stock pot over medium-high heat.
- Add broccoli, potato, onion, carrot, salt, and pepper and saute until the onion is translucent, about 2 minutes.
- Add flour and cook for an additional minute.
- Add chicken broth and bring to a boil, then reduce heat and simmer for 15 minutes or until broccoli and potatoes are tender.
- Lightly puree in a blender until the desired consistency is reached. I like to leave it slightly chunky.
- Return to pot and blend in cream and additional salt and pepper, if desired.
- Serve immediately.
